Update:

  1. This is not the kitchen I envisioned for Easter weekend.
  2. After 3 intense days of  remodeling, screeching sawing machines
  3. …the tool man has decided to install the new kitchen AFTER Easter.
  4. So when you get lemons…make lemonade.
  5. I did some grocery shopping yesterday and as an enthusiastic cook
  6. …I was forced to go to the “microwave” meals section.
  7. Desperate for some warm food I did manage to make scrambled eggs 
  8. …and steam some potatoes in the microwave. 
  9. So, Easter Sunday will be buttermilk pancakes
  10. …(have some in the freezer) with maple syrup 
  11. …and a large Salade Nicoise with tuna in a can,
  12. …some olives, cherry tomatoes and arugula + dressing.
  13. I did splurge on a 2 pound bag of chocolate easter eggs. 
  14. If I get depressed …then I just eat a few of them.
  15. Happy Easter…everybody, enjoy your
  16. …Bourbon Glazed Ham + steamed asparagus with lemon butter!

    Oh dear, oh dear, oh dear… a disappointment to be sure, but your alternative plans sound marvelous!… especially the chocolate eggs! And think of the joy when the project is properly done and dusted… such a marvelous summer to look forward to! Happy Easter and “bedankt voor de bloemen”!

      Gosh, you are up early! Just trying to get through to the end…new kitchen…and treated myself to a new pan that is still in the box. No use opening it now! What are you planning for Easter dessert?

        Dessert will be an Italian Ricotta Pie and my Lindt dark chocolate bunny! It’s a little like a cannoli filling, but lasts longer… the cannolis get soggy pretty fast.

        Grammy Rose’s Easter Ricotta Pie
        1 1/2-2 lb. ricotta cheese
        4-5 eggs well beaten
        1 cup sugar
        3/4 cup chopped citron
        1/2 cup almonds, toasted (sliced or chopped)
        1/4 cup semi sweet chocolate chips
        1 tsp. vanilla
        2 Tbsp. light rum
        1 prepared 9 inch frozen pie crust (store bought is ok!)
        Combine all the the ingredients in a large mixing bowl and mix well. Pour into pie crust and bake at 350*F for 50 minutes or until a knife inserted in the center comes out clean. Cool completely.

    Sounds, delicious…I just cannot find store bought frozen pie crust here. When I think about making my own crust…I just lose my cooking enthusiasm. My crusts never trun out well. I DID find in the attic with some kitchen things a can of CRISCO. I know, so bad for you heart (fat)…but it does advertise as the best flakey crust. I’ll try it when kitchen is ready!

      I too am not fond of making my own pie crust, but I will send you a very forgiving recipe using the Crisco… they are right, it does make an excellent flakey crust!

        To Kakelleyusa: Daaaaang Grammy Rose’s pie sounds delicious!!!! I clipped that straight into OneNote so I can make it as soon as I have a functioning kitchen again! I’m not going through a major renovation like our Nancy, but I’m currently without a fridge and I need to have the gas company come out and do a safety check on the stove/oven, which has been sitting unused, for 6 1/2 years. Who knows what happens to gas pipes and appliances over such a long time of sitting idle??

        And Nancy, so sorry you can’t get Pillsbury Pie Crusts there! They are even better than the crust my Mom made from scratch, using Crisco. lol

    Nancy, remember that you don’t need a full kitchen for a good Merlot….just a nice glass… and chocolate. Happy Easter🐇

      So true… :) Cooking in the backyard with a magnetron…doing the dishes in the sink in the downstairs bathroom all is easier with a glass of wine. I’m. just glad it didn’t snow on Easter as it did last year!
